- Get 1 tbsp chilli sauce, I use Thai chilli jam
- Get 3 tbsp oyster sauce
- Take 5 tbsp ketchup
- Make ready 1 tbsp sweet soya sauce
- Prepare 1 tbsp cornflour
- Get 1/4 cup water

Stir to mix and add a little bit of water (about 1/2 cup), add sugar snap peas and tomatoes then mix well.
- Bring to boil then add in lime leaves and simmer for another 2-3 minutes
- On another pan, medium heat, add 1 tsp of vegetable oil, add your noodles in and add 1/2 tsp of sweet soy sauce and mix in really quick. Toss them up a little and turn the heat off. (this is optional as you can skip this method and add your gravy on top)
- Add your noodles on a serving plate or bowl and add your sauce on top. Top up with crushed peanuts, crispy shallots, red chilli and coriander. Serve straight away.
