  2. Make ready 8 oz button or cremini mushrooms - thinly sliced
  3. Take 1 red pepper - sliced
  4. Get 1 yellow pepper - thinly sliced
  5. Prepare 2 celery stalks - thinly sliced on an angle
  6. Prepare 1 head broccoli - chopped into med-large florets
  7. Take 200 grams snow peas or snap peas - strings removed
  8. Make ready 5 clove garlic - chopped or crushed
  9. Prepare 1 thumb sized piece of ginger - grated
  10. Make ready 1 packages blue dragon stirfry sauce (or your favorite)
  11. Make ready 1 tbsp hoisin sauce
  12. Take 2 tbsp soy sauce + more to taste (as needed)
  13. Take 1 tsp sesame oil
  14. Take 1 packages fresh chow mein noodles

We've been on a big noodle kick lately. This got hoovered off the plates so fast that half the noodles were still crunchy in the last mouthful. I know there are quite a few ingredients here, but trust me - it's all worth it! I'm going to break the ingredients down into two parts - the chow mein sauce and the stir fry.

Steps to make Chicken Stirfry with Chow Mein Noodles:
  1. Get all the veggies washed and prepped. Group the veggies in bowls in the order you will add them to your skillet/wok (see photo). Cube chicken and place in a ziplock bag.
  2. Add hoisin sauce, soy sauce and sesame oil and about a half tsp of the garlic and ginger to the chicken and let it marinate for at least half an hour
  3. Bring a medium pot of water to a boil and add chow mein noodles. Keep an eye on them and use a fork to help break them up gently.
  4. Bring a large skillet or wok to med-high heat and pour the contents of the chicken bag in. Sautee the chicken until just cooked through. Remove to a bowl and keep warm.
  5. Turn heat up to high and let your skillet/wok heat up again. Once it's super hot, start adding your veggies. Remember to keep them moving! Mushroom and onions first for about 5 mins. Then add peppers and celery for another 5 minutes. Finally, add broccoli, snow peas, garlic and ginger and about 1/4 cup water. Cover to let the broccoli soften a bit.
  6. Your noodles should be softened by now - strain them.
  7. Turn off heat but leave your skillet/wok on the burner. Add noodles, stirfry sauce and chicken back to the pan and mix it all together (I find tongs easiest). Add more soy sauce if needed - as desired.
  8. Enjoy!!

The sauce is important because this is what gives the Chicken Chow Mein its classic flavor. Difference between Lo Mein and Chow Mein. The difference lies in the noodles. Both are wheat noodles made with egg so they are yellow(ish). Lo Mein Noodles are wet and oily out of the packet, then boiled or soaked until soft before tossing with a sauce, vegetables and protein.
