- Night before, cover your fruit in cold water and leave them overnight
- The next day, pre heat the oven to 180 degrees C (gas mark 4)
- Put the water and fruit into a saucepan and bring to the boil
- Once boiled, strain off the water
- Whilst the fruit is still hot, put the fruit back into the pan and take it off the heat. Add the butter, sugar and mix until melted
- Add the eggs, almond essence and flour and mix together
- Butter the loaf tin and add a lining at the bottom with wax paper
- Add the cake mixture to the tin
- Add a few flaked almonds on the top of the mixture
- Bake for 30 minutes on 180 degrees Celsius and then lower the heat to 150 for another 30 minutes
- Test with a skewer and if it comes out clean, the cake it ready and should be a nice golden brown on top
- Enjoy with either hot/cold with/without a thin layer of butter AND a good cup of tea!
