The ingredients needed to make Ragu:
  1. Prepare 1000 kg lean minced beef
  2. Take 2 large onions finely diced
  3. Get 6 cloves garlic finely diced
  4. Take 6 tins chopped tomatoes
  5. Get 1 glass good quality red wine
  6. Take 200 ml beef stock
  7. Get 6 carrots sliced
  8. Make ready 5 celery sticks sliced
  9. Make ready 2 tbsp hot smoked paprika
  10. Make ready 2 tbsp sumac
  11. Get Salt and pepper
  12. Get 1 tbsp sugar
  13. Take 2 peppers diced
  14. Get Parmesan grated

Steps to make Ragu:
  1. First of all brown the meat! On a medium heat in a large pan.
  2. Whilst the meat is browning, dice the onions
  3. Then the garlic and add to the pan.
  4. Chop the mushroom and add!
  5. Then the carrots.
  6. Celery…. add
  7. Chop the peppers and add to the pan, stir well!
  8. Next add the tomatoes.
  9. Stir add the wine and stock.
  10. Throw in the spices, add a lid! Turn the hob down to a low simmer! Stir regularly to prevent it from sticking.
  11. After over 1 and a half hours take of the lid and reduce! Taste to check for seasoning!
  12. Let it simmer for as long as possible! Serve!
