Spray some more oil into the pan and turn the heat down. Gently fry the toastie, until the cheese is melted. Be careful not to burn the bottom at this point, keep checking it.
- Now, if you don't like a runny yolk, here you can choose to flip the toastie over to cook the yolk a little, but I prefer it nice and runny so leave it as it is. Garnish the egg with the chives and chilli, season with salt and pepper to taste. Eat and enjoy! :)
