  1. Make ready 6 eggs
  2. Get 400 g pork sausage meat (Empty your fav sausages if you like)
  3. Make ready 1 egg
  4. Make ready 1/4 pint milk
  5. Take 60 g Breadcrumbs
  6. Take 600 ml Sunflower oil

Scotch eggs can be served straight out of the fryer, or at room temperature. A scotch egg is simply boiled egg wrapped in sausage, coated with breadcrumbs and deep fried or sometimes baked until crisp and golden. This is a very simple, easy scotch egg recipe and it's really appetising. I make these all the time.

Instructions to make Easy Scotch Eggs:
  1. Add the eggs the to a pan of cold water and bring to the boil on a high heat. Once boiling leave them in for 10 minutes.
  2. Divide the sausage meat evenly into 6
  3. After the 10 minutes are up run the eggs under cold water for a couple of minutes until completely cold this will keep the whites white.
  4. Peel the eggs
  5. Place the eggs on the sausage meat
  6. Mould the sausage meat around the egg. Flour your hands and the board to stop them from sticking while doing this. Try to close any holes and get rid of any air. Air is the enemy!
  7. Combine the single egg with the milk to make an egg wash
  8. On a floured board shape each piece into a circle leaving a coating of flour on each.
  9. Add the breadcrumbs to a bowl.
  10. Roll each sausage ball in the egg followed by the bread crumbs
  11. Heat the oil on a medium heat.
  12. When the oil is slightly starting to bubble lower the heat and add a couple of eggs gently. You can cook two at a time
  13. As the eggs cook, delicately rotate them so they are cooked though, they are ready when golden brown and looking crispy roughly 10 minutes
  14. Top tip: If the oil is too hot the sausage meat will crack and fall off so lower it! You may need to sacrifice a test egg. It is better to let them cook slowly and stay in one piece!!
  15. When the eggs are cooked transfer them to a plate lined with kitchen roll.

I usually use Panko breadcrumbs as they get so crunchy and delish. Scotch eggs are perfect for picnics because they should be eaten cold while sitting on a blanket in a field with grazing cows, Chardonnay and yellow buttercups - my perfect picnic vision. Cut them up into quarters and serve beside your favorite dip. Divide the sausage into six portions; flatten and sprinkle with salt and pepper. Shape each portion around a peeled hard-boiled egg.
