Heat the remaining oil in a shallow pan. Add the mustard seeds and curry leaves, and cook until they crackle, then add the onion paste and cook until sticky. Stir through the curry powder, then pour in the coconut milk. Add the cloves, cinnamon and the chilli, and bring to a simmer.

- Add onion and oil to pan. Cook until slightly softened then add courgette and sunflower seeds. Cook for a further few minutes
- Add garlic, chilli and all of the spices. Cook for 1-2 minutes, taking care not to let the spices burn.
- Add string beans, tinned tomatoes and lime juice and cook for 10-15 minutes until all the veg is tender.
- Add coconut milk and cook for a further 5 minutes, stirring occasionally.
