  1. Prepare 220 grams boneless skinless chicken thighs diced

  17. Make ready 1/2 red pepper sliced
  18. Prepare 1 medium tomato chopped

  20. Get handful fresh coriander, chopped
  21. Prepare to taste Salt and pepper
  22. Get 75 ml water

A balti curry is a curry cooked over a high flame with spiced fresh meat and/or vegetables, then cooked again with extra spices and served in the traditional round-bottomed balti dish. Though there are restaurants now serving the famous dish across the whole of the UK, you can make at it home and at a fraction of the cost. The truth is that the Balti actually refers to the dish that the curry is cooked in rather than the curry itself. The dish that it's cooked in is an Indian cast iron, round-bottomed wok with two handles calle a karahi.

Instructions to make Chicken Balti:
  1. Put the chicken in a medium bowl. Mix in the lime juice, paprika, chilli powder and a grinding of black pepper, set aside to marinate whilst we prepare the veggies.1. Heat 1 tbsp of the oil in a non-stick pan. Place in the cinnamon stick, cardamom pods, chilli and cumin seeds, and stir to release the flavour. Add in the onion, garlic and ginger and fry over a medium-high heat for 3-4 mins until the onion starts to turn brown.1. Add the remaining oil, then drop in the chicken and stir-fry for 2-3. Then pour in the turmeric, cumin, ground coriander and garam masala into the pan, turn down the heat so it slowly simmers for a few mins, then add the passata the water, then add the slices of pepper.1. Keep the heat low so it slowly simmers down which should be 15 – 20 minutes. Leave it longer if you like it just gets better
  2. Once the chicken is tender add the chopped tomato, simmer for 2-3 mins, then add the spinach and turn it over in the pan to just wilt. If you want to thin down the sauce, splash in a little more water.Enjoy

Chicken curry stir-fry in balti pot, or flat-bottomed wok, with peppers and onion. I find it easier to prepare the curry sauce first and allow it to cook slowly on low heat while I prepare the remaining ingredients & begin the stir-fry, so I've organised the recipe into two parts. Add chopped chicken and a little cold water,and continue to cook until chicken is cooked through, stirring occasionally. Add chilies, coriander and cream, stir in well and cook for a few minutes more. If the sauce is a little thick just add water to achieve your preferred consistency.
