The ingredients needed to make Sweet Potato Tapioca Ball:
- Get 110 gr mashed steamed sweet potatoes
- Take 25 gr sugar
- Prepare 40 gr tapioca flour
- Prepare 10 gr corn flour
Sweet potato though belonging to the same family is a completely different vegetable and as the name suggests sweeter in taste( no brainer there ;) its used as a vegetable preparation Tapioca is a starch extracted from the tuberous roots of the cassava plant (manihot eculenta), also known as manioc. Now, back to our Sweet Potato Balls recipe. I used glutinous rice flour to give them a slightly chewy bite together with white rice flour to keep them gluten free. Swap out the glutinous rice flour with tapioca starch for a softer version.
Instructions to make Sweet Potato Tapioca Ball:
- Mix all ingredients together to create a dough. Create a small ball
- Heat oil in a pan over low heat. Once the oil is heated, add the sweet potato balls. Fry them for about 2 minutes before increasing the heat to medium. Move the balls around during frying. Once the oil is heating up vigorously (as seen in the photo), use a fork to press each ball against the wall of the pan. The whole frying process should take about 6 minutes.
Always remember to deep fry these in medium low heat as they burn easily. The remaining sweet potato puree can be used as a sandwich filling, pancake topping or eaten just like that! Whisk the tapioca flour and glutinous. I bought some Tapioca Pearls from my Taipei trip recently and I thought it would be a perfect way to use them. So, I used the knowledge I gained to prepare You may simplify it by just preparing the Taro and Sweet Potato Balls served in ginger soup.
