Cut the pineapple into bite size pieces and toss together with the other ingredients. Fold each pineapple round in half to resemble a taco shell. Melt margarine in a large frying pan. In a heavy-based pan, heat the oil and add the curry paste.

- On medium heat fry onion and chilli. Once soft add curry paste and fry till fragrant. Add pineapple juice and water and prawn heads (or stock) bring to boil and simmer for 8-10 minutes.
- Add red pepper, green beans, baby corn and stir. Remove prawn heads. Add pineapple and simmer for 5 minutes. Add prawns and cover. Cook for 90 seconds.
- Add coriander, and remove from heat and stir. Season with salt and pepper and serve hot 🤩
Splash in the fish sauce, then the coconut milk and pineapple. Add the lime leaves or juice, chilli and lemongrass. Mash the chilli, garlic and sugar to a paste using a pestle and mortar or small processor. Stir in the lime juice and fish sauce, then set aside. Peel, quarter, core and slice the pineapple at an angle.
