  5. Stir until almost combined then add the sweetcorn and mix until combined. Do not mix – there may be a couple of lumps!
  6. Pour into the greased cake pan and bake for 20-25 minutes or until a knife inserted comes out clean. The cornbread should have a lovely golden crust.
  7. Serve warm with salted butter and maple syrup.

If there are any leftovers, we have the cornbread the next day for breakfast served with honey and butter. WELL, I unlike moist cornbread recipes, this southern sweet cornbread is EXTREMELY moist. I use a nice amount of salted butter ( remember to use salted, not unsalted for this recipe darlin'!) The butter works it's magic along with the other ingredients, and after the southern sweet cornbread is done, you won't need to add anymore butter! Cut in shortening until mixture resembles coarse crumbs. In another bowl, whisk eggs and milk; stir into crumb mixture just until moistened.
