  6. Simmering the sauce until its syrupy.

Use dried cranberries or sultanas if you can't find sour cherries. In a bowl combine the rosemary, parsley, thyme, grapeseed oil and salt and pepper, to taste. Remove from the heat and stir in the mangoes and stem ginger. Finely chop the red onion and place in a medium-sized mixing bowl. Roast the jalapeno and Serrano over an open flame (I do this over my gas range), de-seed them, chop finely and add to the mixing bowl.
