  2. Prepare 200 grams close cup mushrooms
  3. Get 3 large onions
  4. Take 15 grams fresh ginger

Do not use olive oil for this recipe, or it will lose the curry flavor. Turn the heat up a little and add the mushrooms. Cook briskly for a few minutes until golden in patches. Add the chilli and spices and cubed tofu and stir to coat, then pour in the coconut milk.

Instructions to make Sig's. Mushroom and Tofu Curry:
  1. Chop two of the onions and set aside. Use a blender to puree the other onion with the ginger and garlic. Puree the tomatoes separately.
  2. Place the tofu and mushrooms in a pot add half of the chopped onion, black cardamom, cloves, bay leaves, peppercorns, cumin seeds and salt to taste. Gently cook for 25 minutes, drain and reserve the liquid.
  3. Separate the tofu and mushrooms from the other ingredients, set aside. In a separate pot heat oil add the other chopped onion and saute for 25 minutes until brown but not burned.
  4. Add pureed onion ginger and garlic. Saute for 10 minutes.
  5. Add turmeric, garam masala, coriander powder, pepper and mango powder and stir through. After one minute add tomato puree, saute for a few minutes.
  6. Add mushrooms and tofu and stir gently, add the reserved liquid cook until. heated well through. Add some salt if needed.

Add around half of the vegetable stock and seasoning and bring to a simmer. In this recipe the tofu and mushrooms are sautéed until cooked ans simmered in mildly spiced curry with mustard and soy sauce and flavoured with lots of ginger and sesame. Serve the Tofu and Mushroom Curry with a hot bowl of steamed jasmine rice for. Chop the tofu into square sized pieces. In the saucepan you used to fry the mushrooms, heat a tbsp of oil on medium heat and add the tofu.
