The ingredients needed to make Tomatillo vinagrette:
  1. Get 1 lb Tomatillos
  2. Get 2 tbsp vinegar(preferably white)
  3. Get 4 tbsp Canola oil(more or less, adjust to your taste)
  4. Take 1/2 tbsp Kosher salt
  5. Prepare 1 Jalepeño(seeded and chopped)
  6. Prepare 1/2 tsp ground black pepper

Stir in the diced avocado and top with the cilantro, queso fresco and toasted pepitas. Combine tomatillo's, jicama, peppers, mango, and chili. In a small bowl, combing the liquids, garlic and cilantro. Remove husk from tomatillos and rinse to remove any sticky residue.

Instructions to make Tomatillo vinagrette:
  1. Peel the tomatillo skin off(if present) and rinse thoroughly.
  2. Quarter tomatillos and drop into food processor along with the minced garlic, vinegar and jalepeño.
  3. Blend ingredients and add oil slowly while doing so, until it is a nice relatively pureed texture.
  4. Taste dressing, add salt & pepper and blend well, if desired.

Remove from boiling water, rinse with cold water and allow to cool for a few minutes. Cut the tomatillos in half and place into a baking pan with the onions and jalapeno. Remove and set aside to cool. Add a few tablespoons of water if needed until it's smooth like a salad dressing. Fresh cilantro, lime and tomatillos blend together to taste JUST like the Cilantro Lime Vinaigrette at Cafe Rio and Costa Vida.
