Tomato coconut chutney is known as red chutney recipe. It can be served with idli, dosa and with other breakfast recipes. It is a traditional and classic. I usually make tomato chutney with peanuts and/or sesame seeds but never with coconut.
Steps to make Tomato coconut chutney:
- First either grate the coconut or cut into small pieces. I took the easy route,cutting. also cut the tomato in small pieces.
- Now take oil in kadhai and fry each of them one at a time on low simmer. Fry coconut till it becomes brown. Tomato till it's half cooked meanwhile you can also fry the red chilli
- Let both mixtures come to room temperature. Now first grind the coconut in mixture grinder if you did not grate it.
- Now add tomato and red chilli to it. And grind it again. Add salt, turmeric as required. Grind it well. Add water and grind again till it becomes a paste
- Now take the mixture out. in a pad heat oil,add musttard seeds,curry leaves,whole red chilli and add some tadka to it and garnish on top. Your chutney is now ready to be served
