  2. Get 2 cups maida
  3. Make ready 5 tbsp ghee
  4. Make ready Pinch salt

  7. Get 1 cup fresh grated coconut
  8. Make ready 100 gms Mawa
  9. Make ready 1/2 cup dry fruits (chopped)
  10. Prepare 1 tsp cardamon powder
  11. Take as required Ghee for deep frying
  12. Get 3/4 cup sugar

In some states, like Uttar Pradesh, the filling is made with sweetened khoya (milk thickened almost to a solid state) and nuts while in others like Goa, it consists of shredded coconut, nuts, and jaggery. This version uses the coconut filling. Gujiya is a famous sweet snacks prepared during festivals like Holi, Diwali or Dusshera. Mostly gujiya is a type of fried pastry.

Instructions to make Gujiya (coconut stuffing):
  1. For dough: Take flour on mixing bowl. Add salt and ghee. Mix it properly. Take some flour in hand and tightly hold it in hand. If the flour holds it's shape, ghee is sufficient. Now make a semi soft dough with sufficient water. Cover it with muslin cloth and keep for 1/2 an hour.
  2. For stuffing: Take a deep bottom kadhai. Add fresh coconut and sugar and mix properly. Now switch on the gas and stir on slow flame. Till sugar melts and coconut forms a ball. Switch off the flame. Let it cool down completely.
  3. Now roast the chopped dry fruits for few minutes. Keep aside.
  4. Now roast mawa till it is moisture-free. It will change colour, darker than earlier. Let it cool down.
  5. Now mix dry fruits and mawa in coconut mixture. Add cardamom powder and mix well. Break if any balls are formed in coconut mixture to make soft stuffing.
  6. Now take small ball size dough and roll out small round shape poori. Take a spoon of stuffing and place on half side of poori. Close it by placing the other half above it. Apply little water on all sides of poori and close it by folding it. Or can cut extra dough with pizza cutter or knife.
  7. Repeat the procedure for remaining Gujiya. Deep fry all the Gujiya in hot ghee. Fry till golden brown. Enjoy your Gujiya.

However, I have prepared baked gujiyas which are equally tasty and delicious. Normally, gujiya is stuffed with mawa or rava (sooji) filling. I have stuffed them with smooth and silky coconut filling. Mawa Gujiya or Gujiya Recipe: A crispy, flaky Indian pastry stuffed with sweetened mawa /dried whole milk particles. This is usually savored as a snack during Holi and Diwali.
