- Slit the capsicum from middle deseed it.
- In an open pan blanch them for 5 minutes.
- Drain it and keep aside.
- On flame put pan add oil and add finely chopped garlic.
- Saute it and add finely chopped onion saute just for 2 minutes add salt.
- Mix well add red kidney beans saute it add mexican herbs red chilli flakes origano and red chilli sauce or tabasco sauce mix and add rice stir and stuff in Capsicum.
- On the top of capsicum great cheese as much you like and bake it for 5 minutes on preheated oven at 180 degrees.
- Sprinkle Mexican herbs and serve with tomato ketchup.
